This is my favorite curry for making Jamaican recipes. I have tried other brands of Caribbean curry, but this works best because it "self-thickens" as it cooks. I mix it with olive oil for some recipes, and with coconut milk for others.3 heaping tablespoons of curry powder mixed with 1/3 cup of olive oil makes a great curry paste. Mix that with 2 cups of boiling water and 4 cubed and cooked chicken breasts, simmer for 15 minutes and enjoy on a bed of rice.
